Too much bok choy means salad, of course.

I wanted something really fresh and light, and had some leftover boy choy. I decided to use them in place of salad greens, and add in the mango in the fridge, too. Quick and dirty recipe, but it was really fresh and delicious!

  • 2 small bok choy, sliced
  • 1 mango, chopped into even pieces
  • 1/2 green apple
  • cucumber (I have no idea how much.)
  • shredded carrots (as much as you want)

I mixed this up, gave a small drizzle of extra-virgin olive oil, salt and pepper. It tasted like summer!
