Thanksgiving Use-it-Up Challenge: Pumpkin Granola

I had a cup of pumpkin leftover and didn’t want it to go to waste. I like to use up all the little bits in my fridge. It makes me happy.

A little search turned up a recipe for pumpkin granola. And wouldn’t you know it – I had just the things for it.

Here’s how I did it:

  • 4 cups rolled oats
  • 1 cup chopped hazelnuts
  • 2 tsp Penzey’s cake spice
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/3 cup agave
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 3/4 cup raisins

Preheat oven to 325*. Mix all ingredients in a large bowl. It’ll take a few minutes to come together. Spread out onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes. Remove from oven and stir granola around. You want the oat mixture to evenly cool. Return to oven for about 20 minutes.  Allow to fully cool before storing. Add raisins before storing (they burn in the oven!).
