Yummy Pumpkin Chocolate Chip Things

These are kind of like brownies and kind of like blondies.  When I brought them to Lindsay and Jason’s for Halloween (yay, impromptu dinner party!), the common question was “Are these blondies?”.

…..I think so, yes.

I found a recipe that I thought looked fun, and then I changed it a bit.

So, here’s my adaptation of Running to the Kitchen’s Pumpkin Walnut Chocolate Chip Cake Bars. For the record, every last one went. Jason reported them to be moist. Always a winner.

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oats (ground in processor)
  • 1/2 tbsp cinnamon
  • 1 tsp nutmeg
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 stick butter, very soft
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/4 cup plain Greek yogurt
  • as much chocolate chips as you like (I just dump them in until it looks happy)

Preheat oven to 350*.

Cream butter and sugar for 3 minutes. Add egg, vanilla, pumpkin puree, and Greek yogurt.  Mix until combined. Combine your dry ingredients together, and then incorporate into the wet mixture. Stir in chocolate chips.

Pour into an 8×8 baking dish and bake until set (for me, that was about 35 minutes). Cool if you can manage. Otherwise tear right into them.

    Waaaaaaaaaaaaaaay to many ingredients for this non-cook… Can you just FedEx some up to me – they look AWESOME!! YUM!!
