Maureen’s Salad (and other stuff I brought to Andrea’s)

I don’t think I’ve ever once mentioned my work on this blog – you know, things I do when I’m not running/cooking/eating/writing this. Crazy! Well here’s a couple notes on it: I really do love my job. I think I mainly love it because I believe so much in what we do (dental education) and I work with some wonderful people. Really, what more can you ask for?

Maureen is a work friend who recently vacationed at Kripalu (she loved it, for those of you interested). She’d recently made a broccoli salad, recreated from the Executive Chef at Kripalu, Deb Morgan. She told me about it, and I thought it would be the perfect component to take to Andrea’s for dinner.

My girlfriends tend to know that if I’m going to their house, I’m bringing food! And of course, that’s just what I did.

I brought the broccoli salad, edamame hummus and crackers. Andrea gave it two thumbs up. We had dinner out on the porch, which was lovely. And then we painted our nails. Gotta love a little girl time.

This was my take on the broccoli salad:

  • ~2 cups of broccoli, steamed
  • 1/4 cup raisins
  • 1/2 cup green pepper, roughly chopped
  • 1 scallion, minced
  • 1/4 cup cashews
  • 1 tsp dijon mustard
  • 2 tsp olive oil
  • 2 tsp apple cider vinegar
  • 1 tsp honey
  • salt and pepper to taste

Steam broccoli, and place in a large bowl (for easy mixing). Put remaining items in bowl. In a separate bowl, mix together the mustard, olive oil, apple cider vinegar and honey. Add salt and pepper if you’d like. Combine everything and toss well. I let it marinate for about an hour before we ate. Was really good!

Edamame Hummus:

  • 1 cup shelled edamame
  • 4 tbsp tahini
  • zest and juice of 1 lemon
  • salt and pepper

Throw everything into your food processor. Mix until you have landed at your desired consistency. Done!
