Dragon Tofu Scramble – Yum yum!
Melissa and I ate a lot of this. It’s so good, just can’t get enough! Also doesn’t “dragon” anything sound extra cool?
I saw a recipe for Vegetable Quinoa Bowls with Dragon Sauce on Cate’s World Kitchen blog. I dismantled it a bit, and it morphed into this:
Pretty happy with this! Here’s what I did:
First, make the sauce.
- 1/2 cup nutritional yeast
- 1/4 cup tahini
- 1/4 cup water
- 1 tbsp maple syrup
- 2 tbsp tamari
- ground black pepper
Mix together in a blender. I used my Magic Bullet. Set aside.
Squeeze water out of tofu and crumble up. Set aside.
Stir fry any combination of vegetable you’d like. I used:
- onion
- broccoli
- cauliflower
- shredded carrots
- mushrooms
- spinach
- tomatoes (add in when you finish the cooking process and just stir in to warm them up)
- avocado (do the same as with the tomatoes)
Put a little oil of your choice in a stir fry pan, and cook veggies until just tender. Add the crumbled tofu and continue to cook about a minute or so more. Remove from heat, stir in tomatoes, avocado and dragon sauce to taste. I didn’t use all of it, for the record. It definitely made a lot!
