Things I ate and cooked on Monday.

I usually post single recipes (baked goods, anyone?) so I figured I’d show you what I ate on Monday. A day in the life of yours truly. More like menu in the life of, no? Additionally, I made a sweet treat for Michael and took advantage of having President’s Day off and prepped lunch for the week.

After a quick 3 miles and Strong Lifts 5×5 (loving this! Definitely don’t mistake simple for easy. It’s no joke.), I had some jasmine tea and a green monster (spinach, kefir, banana, blueberries).

I played in the kitchen and wanted to try the almond joy bites from The Fit Cookie. Michael proclaimed them better than the original. These are gluten free! (I’m having a few health issues and eating Primal makes transitioning to less gluten/gluten free a bunch easier.)

I prepped for the week by making a few lunches. I loved the Miso Maple Tofu that Cate of Cate’s World Kitchen had posted on her blog. For ease of use (read: less hands on time on the stove), I roasted butternut squash, broccoli and cauliflower and then added tempeh and marinade for the last 10 minutes. Really easy and I have 3 lunches worth ready to go! Really, the maple miso combination is AMAZING. (I skipped the soy sauce for gluten reasons.)

Time for lunch! I made what I can only describe as a “tuna bowl”. I think it’s because this is basically….a bowl of tuna. And I’m kind of obsessed with it. What’s in it: spinach, shredded carrots, tomatoes, cucumbers, scallions, avocado, and a can of tuna. I topped it with a healthy dollop of plain greek yogurt and some of Penzey’s Southwest seasoning. I’ll tell you what: this is a smart combination of flavors. I plan to make this a LOT.

Tuesday was Mardi Gras! I really have been such a busy stress ball that I completely forgot! Michael reminded me. And asked for a king cake. I made this recipe. Here’s the brioche, after first rise. Our neighbor and friend, Lorenzo over at Coffee, Tea and Me asked for some. It’s good to share! Michael dropped him off some cake this morning. The boys gave this 2 thumbs up.

Before dinner, I managed to make some egg puffs for snacks for the week. I really adore this recipe from Christina at I love feta cheese. I didn’t use the turkey, as you can see. Delicious.

Finally, dinner! I have been DYING to make this green soup from Christina (can you tell she inspires me?). It was so DELICIOUS!! I can’t even hide my excitement. I also cannot wait to get a VitaMix 5000. Cannot. Wait. I used an immersion blender, which, while I am not a violent person, I wanted to throw it out the window. But, as I was determined to make my soup, I blended away. And away. And away. I should have doubled the recipe because  um, we ate it all. Mainly me. I had 2.5 bowls.

    eee this makes me so happy 🙂 Seeing all my recipes and that i’m not the only one that likes them LOL

      Hahah yes I would imagine! Honestly I couldn’t stop eating the soup. Thankfully it’s reeeeally good for you. I can’t wait to make it again!
